MATHEW’S Keto Morning Shakes
How to Use This Book
These are original recipe adaptations informed by established ketogenic and Mediterranean cooking patterns. Each recipe makes two modest shakes. Use one as breakfast, a light snack, or a small accompaniment to dinner. A shake should not automatically replace a complete meal: protein needs vary, and liquids are often less filling than solid food.
Design Principles
- Keep digestible carbohydrate controlled by using small berry portions, unsweetened dairy or plant milks, and measured beetroot or maca powder.
- Build protein with Greek yogurt, kefir, cottage cheese, tofu or whey isolate where used.
- Use nuts, seeds and extra-virgin olive oil in measured amounts rather than adding unlimited fat.
- Rotate colours, herbs and spices to increase plant-compound diversity.
- Blend briefly and drink slowly. Texture should remain thick enough to encourage satiety.
Important: beetroot can lower blood pressure in some people; spirulina quality varies and should come from a tested, reputable supplier; maca evidence is still limited. People taking blood-pressure, glucose-lowering, anticoagulant, kidney or thyroid medication should discuss concentrated powders and major diet changes with their clinician.

1. Lebanese Mint, Cucumber and Kefir Shake
Cool, salty and bright: a Lebanese-inspired savoury shake with mint, lemon and cucumber.
Serves 2 | Prep 5 minutes | No cooking

INGREDIENTS
- 300 ml unsweetened kefir
- 1 small cucumber (about 150 g), chopped
- 2 tablespoons fresh mint
- 1 tablespoon lemon juice
- 1 teaspoon extra-virgin olive oil or 60 g ripe avocado flesh
- Small pinch salt
- Black pepper
- 100 ml cold water
METHOD
- Add all ingredients to a blender.
- Blend for 30-40 seconds until smooth.
- Taste and adjust lemon or water. Serve cold.
Functional Nutrition Focus
Kefir supplies protein and fermented-food diversity. Cucumber and mint make the drink hydrating, while measured olive oil adds flavour without making it excessively energy-dense.
2. South Asian Golden Turmeric-Coconut Lassi
A fragrant, unsweetened lassi using turmeric, ginger and coconut.
Serves 2 | Prep 5 minutes | No cooking

INGREDIENTS
- 240 g full-fat unsweetened Greek yogurt
- 180 ml unsweetened coconut milk beverage
- 50 g ripe avocado flesh
- 1 teaspoon turmeric
- 1 teaspoon finely grated ginger
- 1/4 teaspoon cinnamon
- Tiny pinch black pepper
- Stevia or monk fruit to taste
- 4-6 ice cubes
METHOD
- Place all ingredients in a blender.
- Blend until creamy and lightly aerated.
- Add 30-60 ml water only if needed.
Functional Nutrition Focus
Greek yogurt provides protein and calcium. Turmeric, ginger and cinnamon broaden the spice profile; black pepper is kept tiny so it does not dominate.
3. Nordic Blueberry-Flax Yogurt Shake
A Scandinavian-style berry shake with flax for texture and omega-3 precursor fats.
Serves 2 | Prep 5 minutes | Rest 3 minutes

INGREDIENTS
- 250 g full-fat unsweetened Greek yogurt
- 70 g blueberries
- 1 tablespoon ground flaxseeds
- 180 ml unsweetened almond milk
- 1 teaspoon lemon juice
- 1/4 teaspoon cinnamon
- 4 ice cubes
METHOD
- Blend all ingredients for 30 seconds.
- Rest for 3 minutes so the flax gently thickens the shake.
- Blend again for 5 seconds and serve.
Functional Nutrition Focus
The berry portion is controlled. Flax contributes fibre and alpha-linolenic acid, while yogurt adds protein to slow digestion.
4. Italian Strawberry-Basil Macadamia Shake
Strawberry and basil give this creamy shake a fresh Italian summer character.
Serves 2 | Prep 5 minutes | No cooking

INGREDIENTS
- 80 g strawberries
- 50 g ripe avocado flesh
- 8 basil leaves
- 220 ml unsweetened macadamia milk
- 200 g full-fat unsweetened Greek yogurt
- 20 g macadamia nuts
- 1 teaspoon lemon juice
- 4 ice cubes
METHOD
- Blend macadamia nuts and milk for 20 seconds.
- Add remaining ingredients and blend until smooth.
- Serve immediately.
Functional Nutrition Focus
Basil and berries add aromatic plant compounds. Macadamias contribute mostly monounsaturated fat, while yogurt provides the protein base.
5. Spanish Cinnamon-Almond Coffee Shake
A chilled Spanish café-style shake with coffee, cinnamon and almonds.
Serves 2 | Prep 5 minutes | Coffee must be cooled

INGREDIENTS
- 180 ml chilled black coffee
- 1 level tablespoon, about 6 g, unsweetened organic cacao powder
- 180 ml unsweetened almond milk
- 180 g full-fat unsweetened Greek yogurt
- 20 g almonds
- 1 teaspoon organic maca powder
- 1/2 teaspoon cinnamon
- Stevia or monk fruit to taste
- 5 ice cubes
METHOD
- Blend almonds with coffee and almond milk for 25 seconds.
- Add yogurt, cacao, maca, cinnamon and ice. Blend until frothy.
- Serve immediately.
Functional Nutrition Focus
Coffee and cinnamon create strong flavour without sugar. Maca is used conservatively; the evidence for broad health claims remains limited.
6. Greek Lemon-Walnut Yogurt Shake
A creamy Greek-inspired lemon shake with walnuts and a restrained touch of olive oil.
Serves 2 | Prep 5 minutes | No cooking

INGREDIENTS
- 260 g full-fat unsweetened Greek yogurt
- 180 ml unsweetened almond milk
- 25 g walnuts
- 1 tablespoon lemon juice
- 1 teaspoon extra-virgin olive oil or 60 g ripe avocado flesh
- 1 tablespoon mint leaves
- Stevia to taste
- 4 ice cubes
METHOD
- Blend walnuts and almond milk first.
- Add yogurt, lemon, olive oil / avocado, mint and ice.
- Blend until smooth and serve cold.
Functional Nutrition Focus
Walnuts add fibre, minerals and plant omega-3 precursor fat. Lemon and mint make a small measured amount of olive oil taste integrated rather than oily.
7. Spirulina Mint-Lime Green Shake
A clean green shake using a modest amount of spirulina, balanced with lime, mint and coconut.
Serves 2 | Prep 5 minutes | No cooking

INGREDIENTS
- 1 teaspoon organic spirulina powder
- 60 g ripe avocado flesh
- 1 packed cup spinach
- 1 tablespoon mint
- 1 tablespoon lime juice
- 220 ml unsweetened coconut milk beverage
- 180 g full-fat unsweetened Greek yogurt
- 2 teaspoons chia seeds
- 5 ice cubes
METHOD
- Blend all ingredients for 40 seconds.
- Allow to stand for 2 minutes.
- Blend briefly again and serve.
Functional Nutrition Focus
Spirulina is concentrated, so more is not automatically better. Use a batch-tested brand. Spinach, mint and chia add fibre and plant diversity.
8. Beetroot Raspberry Pecan Shake
Deep red berries and beetroot create a vivid shake while keeping the beet dose small.
Serves 2 | Prep 5 minutes | No cooking

INGREDIENTS
- 80 g raspberries
- 1 teaspoon organic beetroot powder
- 2 level teaspoons, about 5 g, unsweetened organic cacao powder
- 25 g pecans
- 220 g full-fat unsweetened Greek yogurt
- 160 ml unsweetened almond milk
- 1 teaspoon lemon juice
- Pinch cinnamon
- 4 ice cubes
METHOD
- Blend pecans with almond milk for 20 seconds.
- Add remaining ingredients and blend until smooth.
- Drink slowly; the shake is naturally tart.
Functional Nutrition Focus
Beetroot powder is limited because it contributes concentrated carbohydrate and nitrate. Raspberries add fibre and polyphenols; pecans add texture and unsaturated fat.
9. Maca Cinnamon Tahini-Style Shake
Maca, sesame and cinnamon create a nutty Middle Eastern-Andean fusion without added sugar.
Serves 2 | Prep 5 minutes | No cooking
INGREDIENTS
- 1 teaspoon organic maca powder
- 1 level tablespoon, about 6 g, unsweetened organic cacao powder
- 1 tablespoon sesame seeds
- 240 g full-fat unsweetened Greek yogurt
- 180 ml unsweetened almond milk
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- Stevia or monk fruit to taste
- 5 ice cubes
METHOD
- Blend sesame seeds and almond milk for 25 seconds.
- Add the remaining ingredients and blend until creamy.
- Serve immediately.
Functional Nutrition Focus
Sesame provides minerals and lignans. Maca is included for flavour and variety, not as a proven treatment for fatigue or hormone problems.
10. Green Tea Blackberry Chia Shake
Green tea, blackberries and chia create a fresh European-style breakfast shake.
Serves 2 | Prep 5 minutes | Tea must be cooled
INGREDIENTS
- 180 ml strongly brewed, chilled green tea
- 80 g blackberries
- 240 ml unsweetened kefir
- 1 tablespoon chia seeds
- 1 teaspoon lemon juice
- 1 tablespoon mint
- 4 ice cubes
METHOD
- Add everything to the blender.
- Blend for 30 seconds.
- Rest for 3 minutes, then stir or pulse once more.
Functional Nutrition Focus
Green tea and blackberries add different polyphenols. Chia provides fibre, while kefir supplies protein and fermented-food diversity.
11. Mediterranean Tomato-Basil Savoury Shake
A savoury Mediterranean shake resembling a light chilled tomato soup.
Serves 2 | Prep 6 minutes | No cooking
INGREDIENTS
- 2 small ripe tomatoes (about 180 g), chopped
- 1/2 cucumber, chopped
- 180 g full-fat unsweetened Greek yogurt
- 10 basil leaves
- 4 pitted olives
- 1 teaspoon extra-virgin olive oil or 60 g ripe avocado flesh
- Black pepper
- Small pinch salt
- 100 ml cold water
METHOD
- Blend tomatoes, cucumber and water until smooth.
- Add yogurt, basil, olives, oil and seasoning.
- Blend briefly; serve cold, not foamy.
Functional Nutrition Focus
This is a controlled-carbohydrate savoury option rather than a sweet smoothie. Tomato, basil and olive oil provide a classic Mediterranean combination.
12. Cucumber-Parsley Hemp Ayran-Style Shake
An ayran-inspired cucumber shake enriched with parsley and hemp seeds.
Serves 2 | Prep 5 minutes | No cooking
INGREDIENTS
- 240 g full-fat unsweetened Greek yogurt
- 1 small cucumber, chopped
- 1/3 cup parsley
- 1 tablespoon hemp seeds
- 1 teaspoon lemon juice
- Small pinch salt
- Black pepper
- 180 ml cold water
METHOD
- Blend cucumber, parsley and water first.
- Add yogurt, hemp seeds, lemon and seasoning.
- Pulse until smooth and chilled.
Functional Nutrition Focus
Hemp seeds contribute protein, magnesium and unsaturated fats. Parsley and cucumber make the shake fresh and suitable beside a savoury meal.
13. Rosemary Blueberry Coconut Shake
Blueberry, rosemary and coconut offer an aromatic Mediterranean flavour without excessive fruit.
Serves 2 | Prep 5 minutes | No cooking
INGREDIENTS
- 70 g blueberries
- 1/4 teaspoon very finely chopped rosemary
- 1 level tablespoon, about 6 g, unsweetened organic cacao powder
- 220 g unsweetened coconut yogurt
- 180 ml unsweetened coconut milk beverage
- 1 tablespoon ground flaxseeds
- 1 teaspoon lemon juice
- Stevia or monk fruit to taste, optional
- 4 ice cubes
METHOD
- Blend all ingredients for 35 seconds.
- Taste before adding more rosemary; it becomes strong quickly.
- Serve after a 2-minute rest.
Functional Nutrition Focus
Rosemary provides intense flavour in a tiny quantity. Flax and berries add fibre; coconut yogurt should be unsweetened and portioned because protein varies by brand.
14. Kale, Lemon and Almond Protein Shake
A stronger protein shake with kale, lemon, almonds and whey isolate.
Serves 2 | Prep 5 minutes | No cooking
INGREDIENTS
- 1 packed cup finely chopped kale
- 60 g ripe avocado flesh
- 40 g unflavoured whey protein isolate
- 260 ml unsweetened almond milk
- 20 g almonds
- 1 tablespoon lemon juice
- 1/2 teaspoon grated ginger
- Stevia or monk fruit to taste
- 5 ice cubes
METHOD
- Blend kale, almonds and almond milk for 35 seconds.
- Add whey, lemon, ginger and ice.
- Blend only until smooth to avoid excessive foam.
Functional Nutrition Focus
This is the highest-protein option. Kale contributes folate, vitamin C and carotenoids; whey isolate provides a complete, leucine-rich vegetarian protein.
Practical Preparation
- Use unsweetened products. Check labels because flavoured yogurt, kefir and plant milks can contain substantial added sugar.
- Keep frozen berries in 35–40 g portions per person for fast preparation and better carbohydrate control.
- Grind flax only in small batches and refrigerate it. Store nuts and seeds away from heat and light.
- Buy spirulina, maca and beetroot powder from suppliers that provide batch testing for contaminants and clear country-of-origin information.
- Drink the shake soon after blending. Chia and flax continue thickening during storage.
Research Basis and Boundaries
The collection follows well-formulated ketogenic principles: controlled carbohydrate, adequate protein, mineral-rich non-starchy vegetables and fats adjusted to appetite rather than forced. Mediterranean elements include extra-virgin olive oil, cultured dairy, nuts, seeds, herbs, berries and varied vegetables.
Evidence for beetroot nitrate suggests a possible modest blood-pressure effect, although findings vary by population and product. Human research on spirulina suggests possible cardiometabolic effects, but product quality and study heterogeneity limit certainty. Maca has been studied mainly for sexual function and subjective wellbeing; evidence for general “energy” or hormone claims remains insufficient.
