How to Use This Book
These fourteen recipes are new formulations built from established, well-reviewed cooking patterns, then rebuilt to fit your approved food guide. Every recipe serves two and is designed for lunch or dinner.
- Only salmon and canned sardines are used as fish. There is no poultry or red meat.
- Only foods shown in the attached guide are used: low-carbohydrate vegetables, eggs, selected dairy, nuts, seeds, herbs, spices, fermented foods and approved fats.
- Grains, beans, lentils, chickpeas, starchy vegetables, sugar, packaged sauces and refined seed oils are excluded.
- Tomato, dairy, nuts and added fat are measured so flavour does not quietly become excess carbohydrate or excess energy.
- Salt should be personalised, especially when sardines, olives, cheese, mustard, sauerkraut or medication are involved.

Ingredients for 2 Persons
- 2 salmon fillets, 160–180 g each
- 300 g broccoli florets
- 120 g plain full-fat Greek yogurt
- 1 tablespoon lemon juice, plus 1 teaspoon zest
- 1 small garlic clove, finely grated
- 1 teaspoon grated ginger
- 3/4 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon paprika
- Pinch of cayenne
- 1 tablespoon chopped mint
- 1 tablespoon extra-virgin olive oil
- Sea salt and black pepper
Method
- Heat the oven to 210°C. Line a tray.
- Mix half the yogurt with garlic, ginger, turmeric, cumin, coriander, paprika, cayenne, lemon zest, salt and pepper. Coat the salmon.
- Toss broccoli with olive oil, salt and pepper. Roast for 8 minutes.
- Add salmon to the tray and roast for 10–12 minutes, until the centre is just cooked and moist.
- Mix the remaining yogurt with lemon juice and mint. Serve beside the salmon and charred broccoli.

Salmon supplies complete protein and marine omega-3 fats. Broccoli adds fibre and sulphur-containing plant compounds, while yogurt, ginger, garlic and spices create a broad food signal without adding sugar.
Keto adjustment: Keep the yogurt unsweetened and do not add honey. Reduce yogurt to 80 g if dairy carbohydrates need tighter control.
2. Lebanese-Style Salmon Kofta with Lemon Cabbage Slaw

- 320 g skinless salmon, finely chopped
- 1 egg
- 1 tablespoon ground flaxseed
- 1 green onion, finely sliced
- 2 tablespoons chopped parsley
- 1 tablespoon chopped mint
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- 1 tablespoon sesame seeds
- 250 g cabbage, finely shredded
- 1 1/2 tablespoons lemon juice
- 1 1/2 tablespoons extra-virgin olive oil

Method
- Mix salmon, egg, flaxseed, green onion, half the herbs, oregano, thyme, sesame, salt and pepper. Rest for 5 minutes.
- Shape into six oval kofta-style patties.
- Heat 1 tablespoon olive oil in a non-stick pan. Cook the patties for 3–4 minutes per side.
- Toss cabbage with the remaining olive oil, lemon juice, parsley, mint, pepper and a small pinch of salt.
- Serve three kofta per person with the crisp slaw and extra lemon.
Functional Health Focus
The chopped-fish format gives a different texture without flour or breadcrumbs. Flaxseed and sesame add fibre and minerals; cabbage and herbs increase plant diversity and meal volume.
Keto adjustment: Do not overwork the mixture. If it feels soft, chill for 10 minutes rather than adding a high-carbohydrate binder.
3. Pesto-Parmesan Salmon with Asparagus and Tomato

- 2 salmon fillets, 160–180 g each
- 25 g fresh basil leaves
- 20 g pine nuts
- 25 g finely grated Parmesan
- 1 small garlic clove
- 1 1/2 tablespoons extra-virgin olive oil
- 250 g asparagus, woody ends removed
- 120 g small tomatoes, halved
- 1 teaspoon lemon juice
- Sea salt and black pepper
Method
- Heat the oven to 210°C.
- Blend or finely chop basil, pine nuts, Parmesan, garlic, 1 tablespoon olive oil and black pepper into a rough pesto.
- Place asparagus and tomatoes on a tray. Add the remaining oil, salt and pepper; roast for 5 minutes.
- Spread pesto over the salmon. Add it to the tray and roast for 9–11 minutes.
- Finish vegetables with lemon juice and serve immediately.

This meal combines oily fish with basil, garlic, olive oil, pine nuts and colourful vegetables. Measured pesto gives intense flavour without turning the meal into an oil-heavy dish.
Keto adjustment: Keep tomato as a flavour accent. Increase asparagus rather than tomato when tighter carbohydrate control is needed.
4. Dijon-Thyme Salmon en Papillote with Leeks and Mushrooms
French inspired | Serves 2 | Prep 12 minutes | Cook 16 minutes

Ingredients for 2 Persons
- 2 salmon fillets, 160–180 g each
- 1 medium leek, thinly sliced and washed
- 160 g mushrooms, sliced
- 2 teaspoons mustard
- 1 teaspoon thyme
- 1 tablespoon lemon juice
- 1 tablespoon extra-virgin olive oil
- 80 g plain Greek yogurt
- Sea salt and black pepper
Method
- Heat the oven to 200°C. Cut two large sheets of baking parchment.
- Divide leek and mushrooms between the sheets. Add half the olive oil, thyme, salt and pepper.
- Place salmon on top. Spread with mustard and drizzle with the remaining oil and half the lemon juice.
- Fold and seal each parcel. Bake for 14–16 minutes. Open carefully because steam will escape.
- Mix yogurt with the remaining lemon juice and pepper. Serve beside the moist salmon and vegetables.

Parchment traps steam, helping salmon stay moist with little added fat. Leeks and mushrooms add prebiotic fibre, minerals and savoury depth.
Keto adjustment: This is naturally light. Add a few olives or one teaspoon of olive oil at the table only if hunger requires more energy.
5. Romesco Salmon with Roasted Cauliflower and Olives

Ingredients for 2 Persons
- 2 salmon fillets, 160–180 g each
- 1 red bell pepper, sliced
- 1 small tomato, halved
- 30 g almonds
- 1 small garlic clove
- 1 teaspoon paprika
- Pinch of cayenne
- 2 teaspoons apple cider vinegar
- 2 tablespoons extra-virgin olive oil, divided
- 300 g cauliflower florets
- 10 olives
- Sea salt and black pepper
Method
- Heat the oven to 220°C. Place pepper, tomato, almonds and garlic on one side of a tray; place cauliflower on the other. Drizzle with 1 tablespoon oil and season.
- Roast for 12 minutes. Remove the pepper mixture; leave cauliflower in the oven.
- Blend the roasted pepper mixture with paprika, cayenne, vinegar and 2 teaspoons oil into a textured sauce.
- Season salmon and place on the tray with cauliflower. Roast for 9–11 minutes.
- Spoon romesco onto plates, add salmon and cauliflower, then finish with olives.

The pepper-almond sauce replaces sugary glaze with vegetables, nuts, olive oil, garlic and acid. Cauliflower adds fibre and keeps the plate substantial without starch.
Keto adjustment: Use only one small tomato and avoid sweetened bottled roasted peppers. Extra sauce can be refrigerated for two days.
6. Piri-Piri Salmon with Garlicky Kale and Green Beans

- 180 g kale, stems removed
- 220 g green beans
- 1 tablespoon chopped parsley or coriander
- Sea salt and black pepper
Method
- Mix hot sauce, paprika, garlic, half the lemon juice and 1 teaspoon olive oil. Coat the salmon.
- Steam or blanch green beans for 3 minutes; drain.
- Heat the remaining oil in a wide pan. Add kale and green beans with a splash of water. Cook until tender and bright.
- Pan-sear or bake the salmon for 9–12 minutes, depending on thickness.
- Finish the vegetables with the remaining lemon and herbs. Serve with the salmon.

Strong spice and acid make the meal satisfying without sugar. Kale and green beans contribute fibre, potassium and vitamin-rich plant volume.
Keto adjustment: Check the hot-sauce label. It should contain no sugar, syrup or starch.
7. Mustard-Dill Salmon with Warm Cabbage and Sauerkraut

- 2 tablespoons chopped dill
- 1 tablespoon butter or ghee, divided
- 1 tablespoon lemon juice
- 300 g cabbage, finely sliced
- 120 g sauerkraut, drained
- Black pepper and a small pinch of sea salt
Method
- Heat the oven to 200°C. Mix mustard, half the dill, half the butter and black pepper. Spread over salmon.
- Bake salmon for 10–12 minutes.
- Meanwhile, melt the remaining butter in a pan. Cook cabbage for 6–8 minutes until tender with browned edges.
- Remove from heat. Fold in half the sauerkraut and lemon juice.
- Serve salmon over warm cabbage. Add the remaining cool sauerkraut and dill at the side.

The contrast of rich salmon, sharp mustard and fermented cabbage makes a small ingredient list taste complete. Cabbage supplies fibre; keeping some sauerkraut cool preserves its fresh fermented character.
Keto adjustment: Taste before adding salt. Mustard, salmon seasoning and sauerkraut can already make the plate salty.
8. Coconut-Turmeric Sardine Curry with Bok Choy

- 1/2 teaspoon cumin
- 1/2 teaspoon ground coriander
- Pinch of cayenne
- 1 teaspoon coconut oil
- 1 tablespoon lime juice
- 1 tablespoon chopped coriander leaves
- Sea salt and black pepper
Method
- Heat coconut oil in a pan. Cook green onion, garlic and ginger for 1 minute.
- Add turmeric, cumin, coriander and cayenne; stir for 20 seconds.
- Add coconut milk and bok choy. Simmer for 5 minutes.
- Add spinach, then fold in sardines gently. Warm for 2–3 minutes without breaking them into paste.
- Finish with lime, coriander and black pepper. Taste before salting.

Coconut, spices and greens soften the strong sardine flavour while preserving speed. Sardines provide protein, marine fats and calcium when the soft bones are eaten.
Keto adjustment: Use unsweetened coconut milk. Serve in bowls without rice; add extra bok choy or spinach for volume.
9. Red-Pepper Walnut Sardine Plate with Cucumber and Mint

- 1 teaspoon lemon juice

Method
- Heat the oven to 220°C. Roast pepper for 18–20 minutes until soft and lightly charred.
- Blend pepper with walnuts, garlic, paprika, cayenne, vinegar, olive oil, pepper and a small pinch of salt. Keep it textured.
- Spread the red-pepper walnut mixture over two plates.
- Add sardines in large pieces. Arrange cucumber around the edge.
- Finish with mint and lemon.

This plate uses roasted pepper and walnuts to create sweetness, body and texture without bread or added sugar. Cucumber and mint keep the sardines fresh and light.
Keto adjustment: Roast the pepper yourself or choose a jar with no sugar. Keep walnuts measured because energy adds quickly.
10. Portuguese Sardine-Stuffed Tomatoes with Egg and Olives

Ingredients for 2 Persons
- 2 cans sardines, drained lightly
- 4 medium firm tomatoes
- 2 hard-boiled eggs, chopped
- 80 g plain full-fat Greek yogurt
- 8 olives, chopped
- 2 tablespoons chopped parsley
- 1 teaspoon mustard
- 1 teaspoon lemon juice
- 2 cups lettuce leaves
- Black pepper and a small pinch of sea salt
Method
- Slice the tops from the tomatoes and scoop out the wet centres. Turn cut-side down for 5 minutes.
- Mix sardines, eggs, yogurt, olives, parsley, mustard, lemon and black pepper. Add salt only if needed.
- Spoon the filling into the tomatoes.
- Serve immediately for a cool meal, or bake at 190°C for 8 minutes for a warm version.
- Place on lettuce leaves and finish with extra parsley.

Egg and yogurt mellow the sardines and increase protein density. Tomatoes provide colour and acidity, while olives and herbs create a familiar Mediterranean finish.
Keto adjustment: Use medium tomatoes rather than very large ones. Increase lettuce if you need more volume.
11. Sicilian Sardine-Stuffed Mushrooms with Pine Nuts

- 35 g Parmesan, finely grated
- 60 g full-fat cream cheese or thick Greek yogurt
- 20 g pine nuts, chopped
- 1 small garlic clove, finely grated
- 2 tablespoons chopped basil
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon lemon juice
- Black pepper
Method
- Heat the oven to 200°C. Brush mushroom caps with olive oil and place hollow-side up.
- Mix sardines, half the Parmesan, cream cheese, pine nuts, garlic, basil, lemon and black pepper.
- Fill the mushroom caps. Top with the remaining Parmesan.
- Bake for 14–16 minutes until the mushrooms soften and the tops are golden.
- Serve with arugula or lettuce if more volume is needed.

Mushrooms bring savoury depth, allowing a small amount of cheese to carry the dish. Pine nuts and basil echo classic Sicilian fish flavours without pasta or breadcrumbs.
Keto adjustment: If using yogurt, choose a very thick one and drain any surface liquid so the filling does not become watery.
12. Niçoise-Style Sardine and Egg Plate

- 1 tablespoon chopped basil
- Black pepper and a small pinch of sea salt
Method
- Boil eggs for 7 minutes, cool, peel and halve.
- Blanch green beans for 3–4 minutes; cool briefly.
- Whisk mustard, vinegar, olive oil, black pepper and a small pinch of salt.
- Arrange lettuce, cucumber, radish, tomato, beans, olives, eggs and sardines on two plates.
- Spoon over the dressing and finish with basil.

13. Spanish Sardine-Cauliflower Croquettes with Lemon Yogurt

- 280 g cauliflower florets

- 25 g grated Parmesan

- 100 g plain Greek yogurt

Method
- Steam cauliflower until soft. Drain extremely well and mash roughly.
- Mix cauliflower with sardines, egg, flaxseed, Parmesan, green onion, half the parsley, paprika and pepper. Rest for 5 minutes.
- Shape into six croquettes.
- Heat ghee or oil in a non-stick pan. Cook for 3 minutes per side until golden and firm.
- Mix yogurt with lemon and remaining parsley. Serve three croquettes per person.

Cauliflower replaces potato, while egg and flaxseed bind the mixture without flour. The crisp outside and cool yogurt sauce make sardines easier to enjoy repeatedly.
Keto adjustment: Dry cauliflower is essential. If the mixture is loose, chill it rather than adding more binder.
14. Italian Sardine and Eggplant Rolls with Tomato and Basil

Ingredients for 2 Persons
- 2 cans sardines, drained
- 1 large eggplant, cut lengthwise into 8 thin slices
- 100 g full-fat cottage cheese, drained
- 30 g Parmesan, divided
- 180 g small tomatoes, chopped
- 1 small garlic clove, minced
- 2 tablespoons chopped basil
- 15 g pine nuts, chopped
- 1 1/2 tablespoons extra-virgin olive oil
- Black pepper and a small pinch of sea salt
Method
- Heat the oven to 210°C. Brush eggplant slices with 1 tablespoon oil and roast for 10 minutes until flexible.
- Mix sardines, cottage cheese, half the Parmesan, half the basil, pine nuts and black pepper.
- Place a spoonful on each eggplant slice, roll and arrange seam-side down in a small baking dish.
- Mix tomato with garlic, remaining oil, pepper and a small pinch of salt. Spoon around the rolls.
- Top with remaining Parmesan and bake for 12–14 minutes. Finish with basil.

Eggplant gives soft, pasta-like structure without grain. Cottage cheese and Parmesan make the filling cohesive; tomato, basil, garlic and pine nuts provide classic Italian flavour.
Keto adjustment: Slice eggplant thinly and keep tomato measured. Serve with spinach or arugula rather than additional sauce.
