How This Book Is Designed
These recipes are original, ingredient-constrained adaptations of established, well-reviewed keto and traditional breakfast methods. The source techniques and live reader ratings reviewed are listed at the end of the book.
THE BREAKFAST FORMULA
- Protein first: eggs are combined with cottage cheese, Greek yogurt, cheese, nuts or seeds so breakfast is not simply fat and vegetables.
- Carbohydrate control: cabbage, cauliflower, eggplant, radish, collards and Brussels sprouts replace bread, flour, potatoes, rice and legumes.
- Fat quality and portion control: extra-virgin olive oil, avocado, nuts, seeds and measured dairy create flavour and satiety without forcing excessive fat.

- 220 g cabbage, very finely shredded

- 2 tablespoons chopped coriander
- 2 teaspoons ghee
- 120 g full-fat unsweetened Greek yogurt
- 1 tablespoon chopped mint

METHOD
- Toss the cabbage with a small pinch of salt. Rest 5 minutes, then squeeze out excess water.
- Whisk the eggs with flaxseed, green onions, ginger, cumin, turmeric, coriander and pepper. Fold in the cabbage.
- Heat half the ghee in a non-stick pan. Cook half the mixture as a thick pancake for 4–5 minutes per side. Repeat.
- Mix yogurt, mint and lime. Cut each chilla in half and serve with the yogurt.

METHOD
- Boil the eggs for 7 minutes, cool, peel and quarter.

- Fold through coriander and lime. Divide between bowls and top with the eggs.

METHOD
- Heat the oven to 190°C. Butter two ramekins.
- Cook the leek in the remaining butter for 5 minutes until soft. Divide between ramekins.
- Add Brie and cream, then crack two eggs into each ramekin. Season with thyme and pepper.
- Place ramekins in a shallow hot-water bath and bake for 9–12 minutes, until whites set but yolks remain soft.

- 4 medium-large firm tomatoes
- 100 g Gouda, grated

METHOD
- Heat the oven to 210°C. Slice tops from the tomatoes and scoop out the wet centres. Stand in a small baking dish.
- Season the cavities lightly and add chopped olives.
- Crack one egg into each tomato. Bake for 10 minutes, then add Gouda and paprika.
- Bake 5–8 minutes more. Finish with parsley and a few drops of olive oil.

- 250 g sauerkraut, well drained
- 150 g cabbage, finely shredded
- 90 g Gouda, grated
- 1 tablespoon butter

- 1 tablespoon chopped dill
- Black pepper and sea salt if needed
METHOD
- Mix sauerkraut, cabbage, mustard, paprika and half the Gouda.
- Melt butter in a wide pan. Form four compact nests and cook for 4 minutes until the bases brown.
- Make a hollow in each nest and crack in four eggs. Cover and cook 4–5 minutes. Fry the fifth egg separately and divide it between plates.
- Top with remaining Gouda, dill and black pepper.

- Divide broth and eggs between bowls. Finish with Parmesan, parsley, lemon and the remaining olive oil.

- Heat the oven to 200°C. Halve the avocados, remove stones and scoop out a little flesh to enlarge each cavity.
- Crack each egg into a small sieve for a few seconds to remove excess loose white, then place one yolk with enough white into each avocado half.
- Bake in a snug dish for 11–14 minutes until whites set. Mix tomato, olives, basil and lime.
- Serve with the relish, Greek yogurt and pumpkin seeds.

- Steam cauliflower rice for 4 minutes. Cool slightly and squeeze out as much water as possible.
- Mix cauliflower with two eggs, Parmesan, half the sesame, parsley, cumin, paprika, garlic powder, salt and pepper. Form eight small patties.
- Pan-cook in olive oil for 3–4 minutes per side. Meanwhile, soft-boil the remaining two eggs and halve them.
- Mix yogurt with lemon. Serve four kofta per person with one egg and the yogurt; finish with remaining sesame.

Cauliflower and sesame add fibre and minerals; eggs, yogurt and Parmesan create a stronger protein base than vegetable fritters alone. The combination supports satiety while keeping grains and potatoes out.
